Sweet Potato Soup
A Fall Recipe to Ground & Nourish
There is an innate intelligence in nature. This intelligence informs what the Earth produces seasonally. During the fall season we see foods growing naturally that contain the opposite qualities of vata dosha, such as root vegetables like sweet potatoes. This sweet potato soup recipe is one of my absolute favorites this time of year. Grounding sweet potatoes pair up with warming spices to create a soup that will leave you feeling both grounded & nourished.
• 4 c. vegetable or chicken broth
• 3/4 c. orange juice
• 1 c. coconut milk
• 3 c. cooked basmati rice (optional)*
• 1 c. cooked lentils (optional)**
• yogurt, for serving (optional)**
• fresh minced cilantro, for serving (optional)**
Ingredients
•2-3 large sweet potatoes, peeled and cut into 1/4 inch thick slices
• 2 TBS olive oil
• sea salt and pepper to taste
• 2 TBS coconut oil
• 1 large yellow onion, peeled and diced
• 1 tsp ground turmeric
• 1 TBS curry powder
• 2 TBS freshly grated ginger
Directions
1. Preheat the oven to 400°F. Toss the sweet potatoes with the olive oil, salt, and pepper and spread out on a large baking sheet. Roast until tender when pierced with a fork, about 25 minutes. Remove from the oven and set aside.
2. Melt 2 TBS of the coconut oil over medium heat in a large saucepan. Add the onion and saute until translucent, about 3 minutes. Add the turmeric, curry powder, and ginger and saute until fragrant, 2 minutes more. Add the roasted sweet potato and broth and bring to a boil, then reduce heat to a simmer. Simmer for 20 minutes, then remove from heat.
3. Add the orange juice and coconut milk. Use an immersion blender or transfer soup to a traditional blender and blend until very smooth. Season to taste with salt and pepper.
*I prefer to serve this soup over a helping of cooked basmati rice. Place a serving of cooked rice in a bowl and ladle soup over top.
** Add toppings of your choice. I like to top with cooked lentils, plain yogurt, and cilantro but this is delicious without as well.
